Classic Caesar Dressing

6 anchovy fillets packed in oil, drained and finely chopped

1 small garlic clove

Kosher salt

2 large egg yolks

2 Tbsp. fresh lime juice

2 tsp. Dijon mustard

1 tsp. Worcestershire sauce

¾ cup extra-virgin olive oil

¼ cup grated Parmesan

Freshly ground black pepper and salt, to taste

Anweisungen

In a large salad bowl, mix and mash the anchovies, mustard, and garlic together with a wooden spatula to form a paste.

Mix in the egg yolks, lime juice, and Worcestershire sauce, stirring until fully incorporated.

Continue vigorously stirring as you drizzle in the olive oil to emulsify.

Stir in the parmesan cheese.

Season with salt and pepper to taste.

Dressing can be made 1 day ahead. Store in an airtight container and chill.
