Craving Kimchi but Don’t Have Napa Cabbage? Try This Easy 30

800g cabbage (1/2 head)
80g green onion
1/2 onion
1/2 cup coarse salt
1 cup water
A pinch of sesame seeds
For the sauce
1/2 cup gochugaru
3 tbsp minced garlic
1 tbsp grated ginger
1/2 cup grated onion
3 tbsp sugar
4 tbsp anchovy fish sauce
1/4 cup plum extract
1 tsp salt

Cut the cabbage and green onion into bite-sized pieces, and slice the onion thinly.
In a large bowl, combine the cabbage, water, and coarse salt. Stir occasionally and let it soak for about 30 minutes.
After soaking, rinse the cabbage under cold water and drain it to remove excess water.
Mix all the seasoning ingredients together. (In the video, I used a blender to blend everything, which makes the paste a bit thicker. If you prefer a cleaner texture, blend the onion and ginger separately, then mix them with the other ingredients in a bowl.)
Add the seasoning mixture to the cabbage and gently mix. Then, add the green onion and onion and toss everything together.
Finally, sprinkle sesame seeds on top before serving.
