Mango Chia Pudding

1/4 cup chia seeds
1 cup canned light coconut milk (full-fat works too)
1 large ataulfo mango, peeled and cut into pieces (approx 1 cup)
1 tbsp maple syrup, honey or agave
1/2 tsp vanilla extract
Anweisungen
Place the coconut milk, mangos, syrup and vanilla extract together in a blender and blend until smooth.
Pour the mixture into a bowl with chia seeds and whisk together for 1-2 minutes until everything is well combined. After 5–10 minutes, stir again to prevent clumps.
Cover and place in the fridge for a minimum of 2 hour, or overnight for the chia pudding to set.
Serve with fresh mango or your favourite fruits.
