Chocolate Banana Chia Seed Pudding

1 medium ripe banana
2 Tablespoons cashew butter (or almond butter)
1 cup almond milk
2 Tablespoons maple syrup
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 Tablespoons cocoa powder
1/3 cup chia seeds
2 Tablespoons cacao nibs or mini chocolate chips
Anweisungen
Mash Banana
Mash most or all of the banana in a medium mixing bowl, reserving a few slices for topping the chia seed pudding (if desired).
Mix Liquid Ingredients
Mix the mashed banana with the cashew butter, almond milk, maple syrup, and vanilla until smooth.
Add Dry Ingredients
Add in the cinnamon, salt, cocoa powder, and chia seeds, stirring until well-combined.
Add Chocolate Chips
Mix in the cacao nibs or mini chocolate chips.
Refrigerate for at least 30 minutes.
