Potato Gratin

5 oz grated Gruyère + white cheddar (any combo you like)
4 oz grated Parmesan
2 cups heavy cream
2 medium cloves garlic, minced
4–4.5 lbs russet potatoes, peeled and sliced ⅛-inch thick
2 tbsp unsalted butter (for the pan)
Kosher salt & black pepper
1 tsp garlic powder
1 tsp onion powder

Step 1 — Prep the Potatoes & Cream Mixture
Heat oven to 400°F.
Mix all cheeses in a bowl, then remove about ⅓ of the cheese and set aside (this will go on top later).
In the large bowl with the remaining cheese, add heavy cream, minced garlic, garlic powder, onion powder, salt, and pepper.
Add the sliced potatoes and toss everything together with your hands so every slice is coated.
Step 2 — Build the Dish
Butter a 2-quart casserole dish.
Stack and arrange the potato slices vertically so they’re tightly packed all the way around the dish.
Pour the extra cream mixture over the potatoes — it should come about halfway up the potatoes. (You may not need all of it depending on potato size.)
Step 3 — Bake
Cover tightly with foil and bake for 30 minutes.
Remove foil and bake another 30 minutes until the top starts turning pale golden.
Remove from oven, sprinkle the remaining cheese on top, and bake about 30 more minutes until deep golden brown and crispy.
Step 4 — Serve
Let it rest a few minutes, then serve and watch everyone absolutely lose their minds.
