Cucumber Salad Flatbread with Crispy Harissa Chickpeas

For the salad:
Half a cucumber
1 cup plum tomatoes
2 spring onions
1 ripe avocado
Half a can of chickpeas
Juice of half a lemon
3 tbsp Greek style yoghurt
3 tbsp tahini
3 tbsp garlic mayo
1 tbsp sumac
Fresh dill and mint
Salt and pepper
For the chickpeas:
Half a can chickpeas
1 tbsp smoky harissa paste
Drizzle of oil
Salt and pepper
Hot honey to serve

Add the chopped cucumber and tomatoes to a bowl with salt and pepper to release there juices.
Combine all the other salad ingredients into the same bowl and mix until combined.
Add the chickpeas to a skillet with the harissa paste and oil and char in the oven for 10 mins until crispy.
Heat up your flatbread, top with the cucumber salad and then the chickpeas, fold it up and get stuck in!
