Coconut Tarts (English recipe - originally ing. by weight)

almost 1 c flour

pinch salt

almost 1/2 c butter

1 tsp berry sugar

1 egg yolk

1/2 c water

Filling:

1 c seedless raspberry jam

1/2 c butter

1/2 c berry sugar

1/4 c self rising flour

1 beaten egg

1/2 c coconut

1/4 c self rising flour

Anweisungen

Preheat oven to 375.

Sift flour & salt in a bowl. Rub in butter. Stir in sugar. Add egg yolk. Add enough water to make a firm dough.

Turn on to floured board & knead lightly.

Roll out, cut out large rounds & linen patty tins. Put a little jam in each.

Cream the butter & sugar together and beat in the egg a little at a time. Fold in coconut & self rising flour and add a little water if necessary to give a soft consistency.

Place spoonfuls in the shells and bake 15-20 minutes until golden & firm to the touch.
