12 Minute Thai Chicken Peanut Noodles

For the Noodles:
8 oz (250g) rice noodles or spaghetti
1 tablespoon vegetable oil
1 lb (450g) ground chicken
2 garlic cloves, minced
1-inch piece of ginger, grated
1 red bell pepper, thinly sliced
1 cup shredded carrots
2 green onions, sliced
For the Peanut Sauce:
1/4 cup creamy peanut butter
2 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon fish sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1/2 teaspoon red chili flakes (optional)
1/4 cup water
For Garnish:
Fresh cilantro, chopped
Crushed peanuts
Lime wedges

Cook the Noodles: Prepare the noodles according to the package instructions. Drain and set aside.
Prepare the Peanut Sauce: In a small bowl, whisk together peanut butter, soy sauce, hoisin sauce, fish sauce, sesame oil, rice vinegar, chili flakes (if using), and water until smooth. Set aside.
Cook the Chicken and Vegetables: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the ground chicken and cook, breaking it up with a spoon, until browned and cooked through, about 5 minutes. Add garlic and ginger, and sauté for 1-2 minutes until fragrant.
Add the red bell pepper and shredded carrots to the skillet. Cook for another 3-4 minutes until the vegetables are slightly tender but still crisp.
Combine: Reduce the heat to medium. Add the cooked noodles and peanut sauce to the skillet. Toss everything together until well combined and heated through.
Serve: Transfer to serving plates and garnish with fresh cilantro, crushed peanuts, and lime wedges. Serve immediately.
