Flavor Base:
Heat 2 Tbsp unsalted butter, oil, finely diced onion, ½ tsp each salt, oregano, crushed red pepper flakes, smoked paprika, in a large saute pan or pot over medium heat. Cook for about 4 minutes, then add 4 minced cloves garlic until fragrant.
Stir in ½ cup sun-dried tomatoes and ½ to 1 cup chicken broth. 1 tin chopped tomatoes.
Add four chicken breasts and cook for 20 minutes.
Remove chicken from pan and shred with two forks then add it back to the pan again.
Top with red onion rings, scattering of parsley, squeeze of lime, and a dash of cream.
