Spicy Tomato Soup

2 tablespoons pure olive oil
1 yellow onion, finely chopped
1 carrot, peeled and grated
4 cloves garlic, chopped
¼ teaspoon cayenne pepper or a dash of hot-pepper sauce such as Tabasco, plus cayenne pepper for garnish
3 Ib (1.5 kg) tomatoes, peeled, seeded, and chopped
1⅓ cups (1 l fl oz/340 ml) Chicken stock
Salt and ground black pepper to taste
½ cup (4 oz/25 g) plain yogurt
¼ cup (½ oz/10 g) minced fresh dill, flat-leaf (Italian) parsley, or snipped fresh chives
Anweisungen
In a saucepan over medium-high heat, warm the oil. Add the onion and carrot and sauté until softened, about 5 minutes.
Add the garlic and ¼ teaspoon cayenne pepper or hot-pepper sauce and sauté until the garlic has softened, about 30 seconds.
Add the tomatoes and stock and bring to a boil.
Reduce the heat to medium and simmer, uncovered, until the flavors are blended, at least 20 minutes or for up to 45 minutes. The longer the mixture cooks, the smoother it will become.
Working in batches, transfer the soup to a blender or food processor and purée until smooth. Alternatively, pass through a food mill placed over a bowl.
Return to the saucepan over medium-high heat and season with salt and pepper. Heat to serving temperature.
Ladle into warmed bowls and top each serving with a dollop of yogurt and a sprinkling of dill or other herb. Dust with cayenne pepper and serve immediately.
