Chili Cheese Burrito

Derek asked me if I could try to recreate our favorite Taco Bell item and I was up for the challenge. While it may not be EXACTLY like the real thing, it was so delicious and had us all getting seconds…even my pickiest kids. 👏🏼
It even had my husband dreaming of us opening a chili cheese burrito shop one day. 🤪

The recipe makes a lot of servings - 17 to be exact. I had 1.5lbs of leftover taco meat that I created this recipe with. You can cut it in half or freeze the leftovers for another day. 🤗
RECIPE - Makes 17 burritos
1 ½ lbs ground beef
3 Tbsp Kristy’s Homemade Taco Seasoning
1 & 1/2 cups water
1/2 of a small onion, chopped
1/2 cup refried beans
6 Tbsp tomato paste
2 Tbsp chili powder
1 tsp cayenne pepper
1/2 tsp salt
8 oz freshly shredded sharp cheddar cheese
low carb tortillas *I used a Hero zero carb tortilla
Anweisungen
Scramble the ground beef in a skillet over medium heat. Drain any excess grease.
Add in the onions, water, tomato paste, beans and seasonings and cook for about 5 minutes until the onions are tender and the beef mixture has thickened.
Add in the shredded cheese and stir until melted.
Place a heaping 1/4 cup of the beef mixture onto a warmed tortilla and roll it up like a burrito.
Nutrition is based off of the exact ingredients I used. It may vary depending on different name brands. Look for cheddar cheese that has zero carbs (Meijer or Kraft.) Also look for refried beans and tomato paste that are lower in sugar & carbs.
