Chilli Prawn Fried Rice

Zutaten

For the Chilli King Prawns:

360g of king prawns, raw or cooked.

1/2 tbsp of sesame oil.

2 tbsp of soy sauce.

Juice of 1/2 a lime.

Tsp of chilli paste.

Black pepper, to taste.

For the fried rice:

Tbsp of sesame oil.

3 cloves of garlic - grated.

3cm cube of ginger - grated.

1 red bell pepper - diced.

Spring onion - finely chopped, white and green ends separated.

500g of cooked, cold basmati rice.

A handful of mange tout - chopped.

Tbsp of soy sauce.

Tbsp of Kejap Manis (sweet soy sauce).

2 tbsp of rice wine vinegar.

1/2 tbsp of chilli paste.

1 red chilli - thinly sliced.

1 pak choi - thinly sliced.

2 tbsp of sweet chilli sauce.

A handful of fresh coriander - finely chopped.

To garnish:

Freshly squeezed lime.

Peanuts - chopped.

Fresh coriander - chopped.

Sriracha & Sriracha mayo.

Anweisungen

For the Chilli King Prawns, add to a bowl along with sesame oil, soy sauce, lime juice, chilli paste and black pepper, then mix to combine. Heat a large pan or wok, on high heat, then add king prawns. Cook for 3-4 mins, then remove from pan.

To the same pan, add remaining tbsp of sesame oil, then add garlic and ginger. Cook for 2 mins, stirring constantly, then add red bell pepper and white ends of spring onion. Stir fry for another 2-3 mins, then add in basmati rice and mange tout, along with soy sauce, Kejap Manis, rice wine vinegar and chilli paste, then stir to combine. Fry until rice darkens in colour and begins to turn crispy.

Add king prawns back to pan, along with red chilli, pak choi, green ends of spring onions, sweet chilli sauce and coriander, then stir again. Taste for seasoning, add more soy sauce or sweet chilli if it needs it, then remove from heat. Garnish with a squeeze of lime, peanuts and coriander. Adding sriracha sauce and sriracha mayo is optional. So is shaping rice into a dome as we did on our video.
