Popeye's Spicy Chicken Sandwich

Why spend $12 on a Popeyes combo when I can spend $30, make a mess, and lose half a day trying to recreate it? Totally worth it. 🍗🔥 (for real though, for less than $30 and you can make 8 sandwiches)

THE MARINADE

1 cup buttermilk

1 egg

1/2 cup hot sauce

1 pack boneless skinless chicken thighs (about 8 thighs)

Whisk the buttermilk, egg, and hot sauce. Add chicken thighs, coat well, cover, and chill in the fridge for at least 2 hours (overnight is even better).

SPICY MAYO

1 cup mayonnaise

1/2 tablespoon cayenne pepper

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1 tablespoon pickle juice

Mix everything together, cover, and refrigerate, it tastes better after a little chill time.

SEASONED DREDGE

2 cups flour

1/2 cup cornstarch

3 tsp. paprika

2 tsp. cayenne pepper

2 tsp. onion powder

2 tsp. garlic powder

2 tsp. salt

1 tsp. black pepper

Drizzle in a few spoonfuls of the buttermilk marinade and stir until small clumps form that’s what makes the crispy texture.

FRYING

Dredge each marinated thigh in the flour mix. Press it in well.

Let coated chicken rest 5–10 minutes to set the batter.

Heat oil to 350°F (175°C).

Fry for 4 minutes on one side, 3 minutes on the other.

Drain on a rack if possible, not paper towels to keep that crunch.
