Chicken Tortellini in a Sun-dried Tomato Cream Sauc

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes, undrained
1 (10 oz) package sun-dried tomatoes, oil-packed, drained and chopped
1 (10 oz) package frozen cheese tortellini
2 cups chicken broth
1 cup heavy cream
1/4 cup grated Parmesan cheese
1 tbsp Italian seasoning
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
Anweisungen
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add onion to the skillet and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more.
Stir in diced tomatoes (undrained), sun-dried tomatoes, chicken broth, and Italian seasoning. Bring to a simmer.
Add tortellini and cook according to package directions, until heated through and tender.
Stir in heavy cream, Parmesan cheese, oregano, salt, and pepper. Simmer for 2-3 minutes, or until sauce has thickened slightly.
Add cooked chicken back to the skillet and stir to coat in the sauce.
Garnish with fresh basil and parsley before serving.
