Chicken and Broccoli Chopped Salad

Ingredients (serves 3):
- 450g chicken breast 
- 1 cup quinoa 
- 2 cups water 
- 1 broccoli head 
- 1 lemon 
- 1/2 red onion 
- 1 large clove garlic 
- 1 tbsp olive oil 
- 1 tbsp Dijon 
- 1 tbsp honey 
Anweisungen
- Pre-heat oven to 220°C. 
- Heat pan on high, season chicken breast and brown (approx. 4 mins per side). 
- Finish chicken in oven, approx. 10 mins. 
- Meanwhile, add quinoa and water to pot on high heat. 
- Once quinoa starts to boil, turn down to simmer, cover and leave for 12 mins. 
- Dice red onion. 
- Chop up broccoli and boil in pot (approx. 8 mins). 
- In a bowl, mix juice of lemon, Dijon, honey and grated garlic clove. 
- Once chicken is done and broccoli boiled, add to chopping board and chop to desired consistency. 
- Add everything to a bowl, season, mix and serve.
