No Bake Protein Bars Recipe (Copycat Blueberry RX Bars)

1 1/2 cup pitted dates
3/4 cup dried egg white powder
1/2 cup whole almonds
1/2 cup cashews
1/2 cup dried blueberries
Anweisungen
Prepare baking pan (8x8 or small bread pan) with parchment paper.
Add everything to your blender, pulse 10-15 minutes until mixture binds together when rolled into a ball. (See Video Above for example)
Press mixture into baking pan.
Pull out of baking pan, slice with a sharp knife and store in a airtight container up to 7 days.

Can use your own dehydrated blueberries for this recipe.
In a food processor, blend the dates until smooth—just make sure to remove any stray pits first! Then add almonds and a scoop of egg white protein powder for a nice protein boost.
Pulse the almonds just enough to leave some small chunks intact—this helps mimic the signature chewy texture of the original RX bars.
The mixture was a bit dry at first, so I gradually added water and a 1/2 or full tsp of vanilla extract paste to help everything come together perfectly.
Placing parchment over the top made it simple to get a smooth, even surface.
