Charred Broccoli & Kale Salad

1 Head of broccoli
4 Large handfuls of kale
1/2 cup chopped dates
3 cloves garlic
1 Tbsp Chilli flakes
2 Tbsp Pomegranate molasses
1 Tbsp Balsamic vinegar
1/4 Cup water
Olive oil
Salt and pepper
Pomegranate seeds to serve
Vegan feta to serve if you have it
For the Christmas caramelized pecans:
1 Cup pecans
1 Tsp smoked paprika
1 Tsp Cinnamon
1 Tsp Nutmeg
1 Tbsp Brown Sugar
1 Tsp vegan butter
Anweisungen
Start by adding some olive oil to a skillet and adding in your broccoli, season with salt and pepper and fry it for a few minutes each side until charred.
Add in the chopped garlic and mix to combine and cover with a lid for a few minutes to steam.
Now add in the pomegranate molasses, balsamic vinegar and water and cover with a lid again for another 6/7 mins, so the broccoli can cook in the steam.
Take off the lid add in the kale and the dates and let the liquid evaporate and the kale to wilt down and cook, continue to stir.
In another pan, dry toast the pecans for a few minutes for them to release their natural oils. Then add in the spices, sugar and butter and cook until caramelized.
Serve up the brocolli and kale and then top with the toasted caramelized pecans, some pomegranate seeds and vegan feta and enjoy!
