Kickass Granola

3 cups oats
1 cup mixed nuts/seeds (e.g., walnuts, pumpkin seeds, flax seeds, etc.)
Cinnamon (to taste)
1-2 tsp salt
Optional: ½ cup protein powder (about 1-2 scoops)
½ cup honey
½ cup coconut oil

1 Mix Dry: Combine oats, nuts/seeds, cinnamon, and salt. (Optional: Add protein powder.)
2 Melt Wet: Melt honey and coconut oil, then mix into the dry ingredients.
3 Bake: Spread the mixture on a parchment-lined baking sheet. Bake at 350°F (175°C) for 15-20 minutes. Cut into chunks and flip, then bake for an additional 10 minutes (if it’s not already golden) until golden. Keep your eye on it so it doesn’t burn.
