This Chicken, Broccoli, and Leek Pasta is rich and comforting, reminisant of my favourite ‘pollo pesto’ pasta from pizza express I used to be obsessed with as a teenager. Perfect for a mid-week dinner, it is so quick to make.

Ingredients to serve 2

530kcal and 50g protein per serving

1 head of broccoli, chopped finely

1 medium leek, finely sliced

1 red onion, finely chopped

2 cloves garlic, minced

1 tbsp chopped basil stems (and a handful of torn basil leaves)

1 chicken stock pot

1 heaped tbsp light cream cheese

50g grated parmesan cheese

Freshly ground black pepper and salt, to taste

200g cooked, shredded chicken breast

1 tbsp American mustard

150ml water

150g uncooked pasta of your choice (penne or fusilli work well)

Anweisungen

Chop the broccoli into small florets. Set aside. Slice the leek finely and chop the red onion. Mince the garlic.

Bring a pot of salted water to the boil and cook the pasta according to package instructions. Drain and set aside.

In a large pan, heat a drizzle of olive oil over medium heat. Sauté the chopped onion, leek, and garlic for 4-5 minutes until softened. Add the chopped basil stems for an extra burst of flavour, and cook for another minute.

Add the chopped broccoli florets to the pan and sauté for 2-3 minutes. Dissolve the chicken stock pot in 150ml of hot water and pour into the pan, letting the vegetables simmer for 5 minutes until the broccoli is tender but still has a slight bite.

Stir in the light cream cheese and mustard, ensuring it melts into the sauce. Add a generous amount of black pepper and stir through.

Add the shredded chicken and basil to the pan and mix well, allowing it to heat through for about 3 minutes.

Stir in the grated parmesan and check for seasoning, adding salt and pepper to taste.

Add the drained pasta to the pan and toss everything together until well-coated with the creamy sauce, loosen with a little water if needed.

Divide between two bowls and top with extra parmesan.
