Spam Musubi

1 package of SPAM
2 eggs
Musubi sauce:
2 tbsp dark soy
1 tbsp light soy
1 tbsp oyster sauce
1 tbsp mirin
1 tbsp rice vinegar
1 tsp brown sugar
1 tsp Korean bbq sauce
Anweisungen
1. Get a large tin of spam and empty it out (this was my first time trying spam. For musubi it's perfect)
2. Slice into 8 even slabs and pat dry, then heat a pan with neutral oil to med-high and fry for 2 mins per side till golden
3. Reduce heat and pour over the musubi sauce, that is:
2tbsp dark soy, 1tbsp light soy, 1tbsp oyster sauce, 1tbsp mirin, 1tbsp rice vinegar, Itsp brown sugar, Itsp Korean bbq sauce - mix to combine
4. Allow the sauce to reduce and thicken, so that it coats each piece and becomes glossy - then remove and set aside
5. Whisk up 2 eggs then place into a non-stick pan laced with butter on med-low heat - cover with a lid and allow to cook ~4-6 mins
6. Once slightly set, flip the egg to quickly cook the other side, then remove from pan and use the spam can as a mould to cut out perfectly thin layers of egg
7. Cut some sushi nori into evenly sized strips then begin to assemble - you can either use a musubi mould like this, or an emptied out spam can lined with cling film which works great too
8. Nori down, followed by seasoned sushi rice, furikake seasoning, then egg, then spam - make sure to press down between each layer to form perfectly compressed components of the musubi
9. Once the layers are made, fold over the sides of the nori to seal each piece
