Grilled Pineapple Chicken with Rice

2 boneless, skinless chicken breasts

1 cup pineapple chunks

2 cups cooked rice (brown or white)

¼ cup soy sauce

2 tbsp honey

2 tbsp pineapple juice

1 tbsp olive oil

2 cloves garlic (minced)

1 tsp ginger (grated)

½ tsp black pepper

½ tsp chili flakes (optional)

Green onions (for garnish)

Anweisungen

Marinate the Chicken: In a bowl, whisk together soy sauce, honey, pineapple juice, garlic, ginger, black pepper, and chili flakes. Marinate chicken for 30 minutes.

Grill the Chicken: Heat a grill or pan over medium-high heat. Brush with olive oil and cook chicken for 5-7 minutes per side until fully cooked and slightly charred.

Caramelize Pineapples: In the same pan, sauté pineapple chunks for 2 minutes until caramelized.

Serve: Slice the grilled chicken and place over a bed of warm rice. Top with pineapple chunks and garnish with chopped green onions.
