Chicken Bacon Ranch Casserole

4 slices bacon
2 chicken thighs - no bone or skin
3 cloves garlic
2 tbsp fresh parsely
8 oz rotini
kosher salt
freshly black pepper
1 tbsp ranch seasoning & salad dressing mix
1 tbsp olive oil
2 tbsp unsalted butter
1/2 c cheddar cheese
1 c heavy cream
1 c mozzerella cheese
1/4 c parmesan
Anweisungen
375 oven. 9x9 baking idsh, use spray (Pam)
Alfredo sauce: melt butter in saucepan. Add garlic & cook, med heat 1-2 minutes.
Stir in parmesan until slightly thickened 1-2 minutes. Gradually whisk in cream 1-2 minutes.
If mixture too thick, add more cream. Season w salt & pepper. Set aside.
Cook bacon until brown & crispy. Drain excess fat, but reserve 1 tbsp in skillet. Put bacon on paper towel.
In large ziplock bag put chicken, olive oil, & ranch dressing. Coat thoroughly & cook.
Cook pasta & drain. Put pasta in dish, layer with chicken & sauce. Sprinkle w cheeses & bacon.
Bake 15-20 minutes.
