Butter Chicken (but healthy?) from Looney Spoons cookbook

2 tbsp butter or ghee
1 1/2 c chopped onion
2 tsp minced garlic
1 tbsp grated ginger
1 1/2 tsp chili powder
3/4 tsp ground coriander
3/4 tsp ground turmeric
1/2 tsp ground cinnamon
1/2 tsp ground cumin
(if you don't have all 4 of those individual spices, garam marsala will do - 1 1/4 tsp)
28 oz can of no salt added diced tomatoes, drained (I also like it with a can of crushed tomatoes instead for a smoother sauce
1 1/2 c reduced sodium chicken broth
1 tbsp brown sugar
1 whole cooked rotisserie chicken, skin removed and meat cut up (I never do this - I usually just use chicken breasts, maybe 2-3, cut up! Or leftover chicken is great, too)
1/3 c light (5%) sour cream (also delicious with low fat greek yogurt)
chopped cilantro for garnish
Anweisungen
Melt the butter in a deep skillet over medium heat. Add onions and garlic. Cook slowly, stirring often until onions are tender around 5 minutes.
Add ginger, chili powder, coriander, turmeric, cinnamon, and cumin. Cook 1 more minutes.
Add tomatoes, chicken broth, brown sugar, and season with salt and pepper.
Reduce heat to low. Cover and simmer for 10 minutes, stirring occassionally.
Add chicken and sour cream. Simmer, uncovered, for 5 more minutes (unless you're using raw - I just let it cook, covered, for as long as necessary - the chicken stays very moist even if it has to sit on the stove for a while until everything else is ready - trust me! Haha)
Remove from heat, stir in cilantro, and serve with rice or naan bread or both!
