Banana Chia Pudding

1/4 cup chia seeds
1 1/4 cup light coconut milk (sub any milk)
1-2 tbsp maple syrup (honey or agave work too)
1 tsp vanilla extract
1 banana, chopped or mashed
1/2 tsp cinnamon (optional)
Anweisungen
Finely chop or mash the banana, then add it to a bowl with the chia seeds, cinnamon, milk, maple syrup, vanilla and vanilla extract.
Whisk the mixture together. Then let it sit for 5-10 minutes and whisk again to prevent clumping.
Cover and place it in the fridge for 2 hours or overnight.
Serve as is or top with chopped banana, coconut flakes or your favourite toppings.
