Loaded Baked Potato Soup

1 yellow onion, diced

4 celery stalks, diced

2 cloves garlic, minced

1/2 tsp black pepper

4 Tbsp unsalted butter

4 Tbsp flour

2 ½ cups whole milk, warmed

1/2 cup heavy cream, warmed

3 cups chicken stock (good quality)

3 russet potatoes, peeled and cut into 1/2-inch cubes

1/2 cup chopped green onion

Cheese & Garnish

1 cup grated medium cheddar cheese (sharp cheddar works)

Chives, to garnish

More cheese, to garnish

Black pepper, to garnish

Notes

Before adding the cheese, ensure the soup is seasoned properly.
