Need a New Taco Tuesday Inspired Meal That’s Pcos Approved

1 tsp olive oil

1 lb ground beef

4 c diced zucchini

1 c diced red bell pepper

2 c corn

1 packet taco seasoning (I like Siete)

1 c shredded Mexican cheese

Cilantro

Anweisungen

In a large heavy bottomed skillet, heat oil over medium heat and cook ground beef until cooked through and no longer pink

Add zucchini, pepper, corn, and taco seasoning and cook until zucchini is fork-tender. Sprinkle cheese on top, cover, and wait until cheese melts. Turn off heat, sprinkle with cilantro, and serve.
