I made a Campari air to top my Hemingway Daiquiri, and now I kind of want to put it on everything. It looks amazing, tastes incredible, and yes—before anyone asks, it does work in a real bar scenario. The air holds up surprisingly well and takes only a few seconds to build.

Here’s how to make the cocktail and the air ↓

Hemingway Daiquiri

2 oz light rum

¾ oz fresh lime juice

½ oz fresh grapefruit juice

½ oz simple syrup

¼ oz maraschino

Shake with ice, fine strain into a coupe, top with Campari air.

Campari Air

½ g sucrose ester (E473)

50 ml Campari

115 ml water

Blend briefly, then run an aquarium pump with an air stone in the liquid until foam forms. Scoop the air and serve.
