CRANBERRY COFFEE BREAD
3 large or 7 small loafs

Bread:
1 1/2 c. orange juice
6 Tbsp. boiling water
6 Tbsp. oil
3 eggs
1 bag cranberries
6 c. flour
3 c. sugar
4 1/2 tsp. baking powder
3 tsp. salt
1 1/2 tsp. baking soda
2 c. chopped walnuts (optional)
Topping:
1/2 c. warm water
1 c. sugar
Anweisungen
In a blender, combine orange juice, boiling water, oil, and eggs. Blend thoroughly. Add cranberries, and blend intermittently with care (Note: the more blended and chopped the cranberries, the more diluted cranberry taste and pinker color loaf. Optimal blend is slightly pink mixture with larger cranberry chunks.)
In a large bowl, sift flour, sugar, baking powder, salt, and baking soda.
Add blended ingredients to dry ingredients (Optional: stir in chopped walnuts). Mix well. Grease and flour baby loaf pans and/or bread pans.
Bake at 350° for 45 min to 1 hr.
Cool for 5 min in pan before removing to cooling rack. In a bowl, combine topping ingredients well. Brush tops and sides of bread on cooling rack with topping while still warm.

Only fill up pans halfway so it won't overflow. Results in better look and makes about 10 mini loaves. (2019)
