BTW, don’t burn the shallots like I did. ⁠

1 shallot (or onion)⁠

oil ⁠

1 can pumpkin puree⁠

1/2 cup sour cream⁠

1/2 cup milk⁠

1 tsp Italian seasoning (or mix of basil, oregano, etc.) ⁠

garlic powder to taste (roughly 1/2 tsp)⁠

1 cup shredded cheese (used in this video) or 1/2 cup parmesan cheese (will result in a less smooth, but very delicious sauce)⁠

Sautee shallot in oil. Mix everything together. Serve with pasta! ⁠
