Mini Chicken Pot Pies

1 cup shredded chicken

1 cup mixed vegetables

¼ onions

1 cup chicken broth

½ cup cream

2 tbsp flour

2 9-inch pie crusts

4 tbsp butter

½ tsp salt and garlic powder

sauté frozen veggies and onions in butter. Cook until onions are transluschet and veggies are fully warmed through.

Anweisungen

Add in the shredded chicken, salt, pepper, and garlic powder and mix until combined.

Add in the flour and mix

Pour in the chicken broth and heavy cream Allow the mixture to bubble and thicken and remove from heat.

Use a small cookie cutter to cut out circles in pie dough that are 2.5 inches in diameter. Place these circles into the cups of a mini muffin pan. Fill each cup with tbsp of filling.

Cut out small circles about 1.25 inches in diameter for the top of the pies.

Bake at 425 degrees F for 15-20 min

APPLE FRITTERS

I tripped this recipe)

1/2 cup apple grated

1 egg

2 tbsp flour

¼ tsp baking powder

¼ tsp cinnamon

Add the grated apples to a bowl along with the egg, flour, cinnamon, and baking powder. Mix until combined.

Add one tablespoon of the apple mixture to a greased pan and press down lightly to form a mini fritter shape. (I made mine larger)

Cook the fritters for 2-3 minutes per side, or until golden on both sides.

RASPBERRY OAT BARS

I double this recipe)

1 overripe banana

¾ cup rolled oats

¼ cup oat flour

½ tsp cinnamon

¼ tsp baking powder

½ tsp vanilla extract

1 tbsp oil & maple syrup

½ cup raspberries

lime juice

For the topping:

¼ cup rolled oats

¼ tsp ground cinnamon

½ tsp oil

Combine the oats, oat flour, baking powder and cinnamon in a bowl.

In a separate bowl, mash the banana and in the vanilla, oil and maple syrup. Mix until combined.

Combine wet and dry ingredients then Press into the bottom of a loaf pan & Bake at 375 for 8-10 minutes

Cook down the berries in a pan with a little squeeze of lime juice until it becomes a jelly-like consistency.

Pour the berry mixture on top of the base and Mix together oats, oil and cinnamon in a bowl and sprinkle on top.

Bake for another 15-20 minutes
