Mini Pumpkin Pies

Pumpkin pie filling
15 oz can of pumpkin
14 oz can of sweetened condensed milk
2 eggs
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt (just a bit under)
1/4 tsp pepper
Crust
2 piece premade rolled pie dough
Topping
Ice cream (optional)
whipped cream (optional)

You will need a 4 inch cookie cutter or a mug or something to cut circles
12 count muffin pan - this works for the little squares meant for brownies too
Preheat the oven to 400f
Mix the pie filling ingredients together, whisk it or use an electric beater
Cut the pie crusts using the 4” circle cutter (I used the smoothie blender cup). You will probably need to take the scraps and smush them together and use a rolling pin or something to flatten it out for 1 extra per crust. I was able to get 6 from each crust doing this.
Press the crust circles into the muffin pan spots, if the don’t come up to the top, that’s fine - you will only fill to just below the top of the crust.
Add the filling to the crusts, nearly to the top of the crust and once the oven is ready, place in the oven for 10 minutes at 400f. After 10 minutes, set the oven to 350 and cook for another 10 minutes. Let cool and top with whipped cream or with ice cream on the side
