Cheeseberry Salad (Mom Hieber)

Zutaten

1 (3-oz) pkg cherry Jello

1 cup hot water

1 (16-oz) can cranberry sauce (whole or jellied)

2 T lemon juice

1 cup heavy whipping cream

1/4 cup sugar

1 (8-oz) softened cream cheese

1/2 cup chopped nuts

Anweisungen

Place jello in mixing bowl, pour in boiling water and stir until dissolved. Stir in cranberry sauce and lemon juice and mix well. Pour into 8x8 inch pan. Place in refrigerator until firm. Beat whipping cream and sugar then beat in softened cream cheese until well blended. Stir in nuts, spread on jello mixture and set til firm. Can be doubled and put in 9x13 pan.

This will be the oldest recipe on this site. It is a recipe from Denny’s mom and dad that they found in one of their Capper’s Weekly newspapers in 1963. They lived in California at that time but dad loved this little newspaper so much that he subscribed to it even after moving to Alaska then to Missouri. It quickly became a family favorite and I even remember it at family events when I started dating Denny in 1964.☺️. After Mom Hieber passed away in 1988 Don took over making it for just about every family occasion. Over the years this recipe has been shared with many people, including Megan’s grandmother Arlene who tried it once several years ago and has been making it ever since. And, Don said to not even think about substituting Cool Whip for the whipping cream as that would be sinful.

See the lovely photo of the Cranberry Salad I added today in its Thanksgiving glory? Actually, I cheated, Don made it for our Easter dinner celebrated on April 19. It was served along with Dan’s Delicious Brisket. In the first photo I staged it for Thanksgiving because that started the annual tradition. There is a second photo that shows Dennis, Don, Jodie and Don at our Easter 2025 dinner which shows this festive salad. Adding the photos is about as much fun as adding the recipes!
