This pie isn’t just for thanksgiving…but it’s a pretty great excuse!

You need:
15g butter
35g golden syrup
25g dark brown sugar
1/2 tsp vanilla extract
big pinch of salt
1 egg yolk
35g pecans, chopped (save one for the top)
15cm square sheet of greaseproof
Around 15cm square of pre-rolled puff pastry (around 60g)
To serve:
Ice cream, cream or custard
Anweisungen
Preheat the oven to 180ºC (160ºC fan).
Add the butter to a bowl and microwave for 20 seconds or so until melted. Add in the golden syrup, sugar, vanilla and salt and stir to combine. Add in the egg yolk and mix again. Finally add in the pecans and mix.
Create a little paper case by placing the greaseproof paper on top of an upturned glass. You want to create four pleats by pinching the paper together the folding down against the glass.
Place in one hole of a muffin tin then lay your pastry into the case, again, folding and creating little pleats to make sure it fits in (dont worry if it overlaps). Press in to the case then spoon in your filling. Place one pecan on the top then bake for 25-30 minutes until golden brown.
Let it cool slightly before serving.
