Sweet Potato Black Bean Casserole

Zutaten

2 large sweet potatoes

1 1/2 cup shredded cheese

1 1/2 cup salsa (16 oz)

1 can black beans

1 cup corn

1/2 cup diced red onion

1 tbsp taco seasoning

Half lime, juiced

5 street taco tortillas cut in small squares

Optional: sour cream

Anweisungen

1. Dice and soften sweet potatoes in oven (400 degrees for 20 min)

2. Add diced red onion + lime juice + taco seasoning in a large bowl

3. Add black beans and corn, then salsa and sweet potatoes

4. Cubed tortillas and mix in

5. Put mixture in greased 9x13 pan

6. Add cheese on top

7. Bake for 25 min at 400 degrees
