Ingredienser

2 slices streaky bacon

1 quantity Classic fries

100g blue cheese, crumbled

handful chopped chives, to serve

FOR THE BLUE CHEESE SAUCE

2 slices pancetta/streaky bacon, finely chopped

1 quantity Cheese sauce (see right)

Vejledning

1 In a frying pan over a medium heat, fry the 2 slices of streaky bacon and set aside on paper towels. In the same frying pan, cook the chopped pancetta/bacon (for the blue cheese sauce) until crispy and set aside.

2 Add the chopped pancetta/bacon to the ready-made Cheese sauce. Taste and adjust the seasoning. TO serve, mound the Classic fries on a platter and pour over the sauce. Scatter over the crumbled blue cheese and the chives. Top with the set-aside bacon slices and serve immediately.

Notater

Serve with Cheese sauce

Melt 50g butter in a saucepan, stir in 60g plain flour and cook, stirring constantly, for 1 min. Pour in 550mI milk in a steady stream, whisking constantly for 5 mins until the sauce begins to thicken. Season with a little salt and pepper. Remove from the heat and stir in 160g blue cheese, crumbled.
