Lemon Blueberry Streusel Cake

Ingredienser

¾ cup sugar

1 large egg

½ cup oil (any variety)

Lemon zest from 1 lemon

¼ cup lemon juice

1/3 cup milk

¼ cup light sour cream

1 1/3 cup all purpose flour

1 tsp baking powder

1 cup fresh blueberries

Topping

½ cup all purpose flour

½ cup brown sugar

¼ cup rolled oats

¼ cup oil

Vejledning

Add sugar, egg, oil, lemon zest and lemon juice to bowl. Mix well.

Add milk, sour cream, mix well, then add flour, baking powder and mix until combined. Fold in blueberries. Pour into 8” x 8” square pan.

Crumble: In small bowl, add oil, brown sugar, oats and flour and mix until combined. Sprinkle over cake.

Bake at 350 F for 30 – 35 minutes or just until tester comes out clean. Let cool and enjoy!
