Chicken Caesar Salad Pizza

This is how you can make an updside down chicken Caesar salad pizza. It’s high protein, lowcarb, and so good. As with any pizza, it’s your call on toppings.

Here’s how to make it:

1.Preheat oven to 425F.

2.You can either use 1lb ground chicken here, or process 1 lb raw boneless + skinless chicken thighs into a food processor and process well. With your ground chicken, add 2 garlic cloves, 1 large egg, 1 tsp salt, 1 tsp black pepper,

1/2 tbsp paprika, 1 tbsp Italian seasoning or oregano and 1/2 cup asiago or parmesan cheese. Process really well.

3.Grab a pizza pan or sheet pan, spray it with olive or avocado oil spray. Add your pizza “dough” and make a very thin layer of crust with the full crust mixture. I went with a few mini crusts, but you can make whatever size you like. Just make it as THIN AS POSSIBLE. Oh, and it doesn’t need to be a circle. I got 8 circles out of the mixture.

4.Bake for 16-20 mins at 425F. Keep an eye on the oven starting the 15 minute mark as ovens vary. Remove from the oven.

5.To make the dressing, mix 3 tbsp mayo, 3 tbsp thick plain greek yogurt, 1 tbsp dijon mustard, 1.5 tbsp apple cider vinegar, the juice of 1 large lemon, 1 finely minced garlic clove, 3 finely diced anchovy filets (optional but so good), salt, lots of fresh cracked pepper, and 1/4 cup shredded parmesan cheese. Mix well, taste and adjust. If the dressing is too thick, thin it out with more lemon juice or a couple tablespoons water.

6.Next, chop up 2-3 romaine lettuce, add the dressing and toss well.

7.Remove the crust from the oven, top with the salad, more shredded parmesan, fresh cracked pepper. Or any other toppings like chopped bacon, tomato, or avocado.
