Chipotle Burrito Bowls

Ingredienser

Chipotle Lime Chicken

1 lb boneless, skinless chicken thighs

Juice of 1 lime

1 tbsp apple cider vinegar

1 tbsp adobo sauce

2 tbsp cilantro

1½ tsp chili powder

1 tsp chipotle powder

1½ tsp cumin

1 tsp salt

¼ tsp pepper

2 tbsp olive oil

Cilantro Lime Rice

1 cup white rice

1½ cups water

½ tsp salt

Juice of 1 lime

3 tbsp cilantro

1 tbsp butter

Black Beans

1 can black beans

½ tsp cumin

¼ tsp chili powder

¼ tsp salt

Chipotle Sauce

¾ cup Greek yogurt

¼ cup light mayo

4 chipotle peppers

2 tbsp adobo sauce

Juice of 1 lime

1 tbsp honey

4 garlic cloves

¼ tsp salt

½ cup cilantro

Water to thin

Optional Toppings

Guacamole • Pico • Sour cream

Vejledning

Mix all chicken marinade ingredients. Add chicken and marinate 20 minutes. Cook and chop.

Cook rice with water and salt. Stir in lime, cilantro, and butter.

Warm beans with spices.

Blend all sauce ingredients (except cilantro) until smooth. Add cilantro and blend again.

Build bowls with rice, beans, chicken, sauce, and toppings.
