Hatch Green Chile Sauce

3 tbsp oil, divided
2 cloves garlic, minced
1 onion, diced
2 cups Hatch green chile, roasted, peeled, seeded, chopped
1 cup chicken of vegetable broth
1/4 cup all-purpose flour
Vejledning
1. In a large skillet, saute onion, garlic, and chile in 1 tbsp oil until onion is transparent, about 3 to 4 minutes. Add broth and bring to a boil. Reduce heat and bring to a gentle boil, about 4 to 6 minutes.
2. In a small bowl, combine flour and remaining 2 tbsp oil to create a roux.
3. Gradually stir roux into chile sauce, 1 tsp at a time, over medium heat, whisking until smooth and thick, 6-8 minutes.
4. Serve immediately or let cool to room temperature. Transfer to an airtight container and refrigerated for up to 2 days.
