3 stalks scallions, finely chopped

3 cooking oil, for pan-frying

For the rice paper:

2 large eggs, beaten

Dipping sauce:

2 tablespoons soy sauce

2 tablespoons Chinkiang vinegar

1 tablespoon chili oil
