Jammy Roasted Tomatoes

•2 pints cherry tomatoes
•3 tbsp olive oil
•4–5 cloves garlic, left whole in their skins
•Flaky salt and black pepper
•Few sprigs of fresh thyme (optional but lovely)
Vejledning
Preheat oven to 400°F. Toss tomatoes and garlic on a baking sheet with the olive oil, salt, and pepper. Spread in a single layer and roast 20–25 minutes until blistered, jammy, and just starting to collapse. Squeeze the garlic out of their skins and stir through.
Serve warm or room temp with flaky salt on top
