Ingredienser

  • 700 g waxy potatoes

  • Pinch of smoked paprika

  • Pinch of salt & pepper

  • Fresh parsley

  • Oil for frying

For the sauce:

  • 3 tbsp sunflower oil

  • 2 tsp smoked paprika

  • 200 ml vegetable stock

  • 1 tbsp tomato paste

  • 1 clove garlic

  • 1 shallot

  • 3 tsp cornstarch

  • Cayenne pepper to taste

Vejledning

  1. Cut the potatoes (skin on if you like) into cubes of about 3 x 3 cm.

  2. Boil for 7 minutes, drain, and let dry.

  3. Fry in oil until golden and crispy. Season with salt, pepper, and smoked paprika.

  4. Sauce: sauté the finely chopped shallot and garlic in oil. Add tomato paste, smoked paprika, and cayenne.

  5. Pour in the stock and let simmer for 5 minutes.

  6. Mix cornstarch with a little cold water, stir into the sauce until it thickens.

  7. Serve the potatoes with the sauce and garnish with fresh parsley.
