Mousumi's Egg Curry

12 x Eggs • • Onion - chopped • Tomatoes - chopped • Garlic and Ginger paste • Onion paste • Turmeric, Chilli, Coriander, Cumin • Salt • Cooking Oil

Vejledning
1. Hard boil 12 eggs and then rub them with haldi (to colour) and some salt
2. Heat 3-4 tbs oil in a frying pan
3. Add eggs and fry for 2 mins, turning
4. Remove froth the pan
5. Add 3 tbs oil to the pan and heat
6. Fry chopped onions for 1 - 2 minutes
7. Add 4 generous isp each of gartic and ginger paste and onion paste
8. Fry together, stirring all the time, for 4-5 mins.
9. Add chilli to taste, 1 tsp coriander, 1 tsp cuminr, and a pinch salt 10. Keep stirring 11. Add chopped tomatoes and continue to fry, stirring all the time 12. Once the oil starts to separate from the paste it should be ready 13. Add 2 cups of water and continue to stir as the mixture boils 14. Add the eggs, cook them in the boiling gravy (tirring to stop then sticking to the base) for about 5 mins 15. Remove from heat, sprinkle with fresh coriander, and pour cream over 16. Stir and serve with rice
