Cajun Lime Chicken Pasta

Ingredienser

Chicken thighs

1 Tbsp of cajun seasoning.

1 Tsp of smoked paprika.

1 Tsp of onion granules.

Tsp of garlic granules.

Tsp of oregano.

Tbsp of extra virgin olive oil.

Cajun Lime Sauce:

1 shallot - finely chopped.

1 sweet red pepper - finely chopped.

3 cloves of garlic - crushed.

Tsp of smoked paprika.

Tsp of cajun seasoning

200ml of chicken stock.

150ml of single cream.

100g of cherry tomatoes.

1 lime - cut in half.

To serve:

Rice or pasta

Vejledning

  1. Season chicken

  2. Pan fry chicken then set aside

  3. Saute shallot, garlic, red pepper.

  4. Season with paprika and Cajun seasoning

  5. Add chicken broth, tomatoes, lime, and chicken

  6. Simmer for 15-20 min until the sauce thickens

  7. Add heavy cream

  8. Serve over pasta or rice
