Chilli Paneer

Paneer & Batter
1 block paneer (225g), cut into cubes
2 tbsp plain flour
1 tbsp cornflour
Splash of water to make a thick batter
Veggies & Aromatics
1 green bell pepper, diced
1 pointy red pepper, diced
1 bunch spring onions (half for cooking, half for garnish)
1 dried red chilli
4-5 big garlic cloves, chopped
2-inch piece ginger, chopped
Sesame seeds (for garnish)
Sauce (mix in a bowl)
2 tbsp soy sauce
1 ½ tsp hot sauce (adjust to taste- i use cholula’s original hot sauce which i feel is the true magic ingredient in this)
1 tbsp ketchup
Tweak ratios as per your taste, it’s a trial and error process, add more or less of what suits you best.
Cornflour Slurry
1 tbsp cornflour + splash of water
Vejledning
Mix plain flour + cornflour with water to make a thick batter. Coat paneer and shallow fry until golden and crispy. Set aside.
Heat oil in a pan. Add chopped ginger, garlic, dried red chilli, and half the spring onions. Sauté on medium-high heat until fragrant.
Add veggies and cook- not too much but just enough so they retain their crunch.
Pour in your pre-mixed sauce. Stir and cook briefly.
Add cornflour slurry and cook until sauce slightly thickens.
Add fried paneer. Toss to coat evenly.
Garnish with remaining spring onions + sesame seeds.
Best served with sticky rice or jasmine rice.
No salt needed, soy sauce has enough!
