Ginger-Garlic Paste

1 (4-inch [10-cm]) piece ginger root, peeled and chopped
12 cloves garlic, peeled and trimmed

Process all the ingredients in a food processor until you have a paste-like consistency.
Try This! Put this paste into an ice-cube tray and freeze it. When you are ready to use some, just pop out a cube and set it aside to slightly defrost. I typically heat my oil, spices, and onions before adding this ginger-garlic paste to a dish. It's perfect to keep on hand for adding to a soup or stew. I love ginger for warding off coughs and garlic for preventing colds. Both are mainstays in my house. My girls have taken minced ginger root and garlic with water since they were old enough to swallow. Swallow a teaspoon of the above mixture with water as a great natural preventative to the most common cold ailments. If you have little ones, mix it with a spoonful of honey or agave nectar. My girls promise it works.

If you enjoy cooking Indian food but don't have time for much prep, this is a terrific shortcut. Just combine ginger root and garlic to create a paste that uwill last you up to a week in the fridge and up to 3 months in the freezer.
