Cocktail Spherical Balls

Ingredienser

I'm all for a minimalist cocktail, but I also find little more pleasing than a little bit of tasteful (pun intended) theatre to accompany my drink. Something fun and memorable to linger over while sitting at the bar.

The Cocktail:

1oz Lychee Sake

½ Gin (they used @suntory_rokugin)

¼ Palm Sugar Syrup

¼ Clarified Lime

2mL Blue Spirulina Solution*

2% Weight Calcium Lactate Gluconate

⅒ Weight Xanthan Gum

Algin bath (the liquid that the frozen spheres get dumped in):

1L Distilled Water

5g Sodium Alginate

The Spirulina Solution is

100g Water

10g Sugar

2g Blue Spirulina Water
