Healthy Banana Bread

2 1/2 cups quick oatmeal
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 cup mashed ripe bananas
1/3 cup coconut oil - melted
1/2 cup syrup or honey
1/4 cup milk of choice
1 tsp vanilla
2 eggs
Use a blender, add first four ingredients. Blend until flour like.
In a separate bowl, add remaining ingredients.
Combine all. Pour into a greased baking dish.
Bake at 325 for up to 55 minutes. Keep checking for doneness with a knife or skewer. When it comes out clean, pull from the oven. Better when not over baked.
I use a casserole dish, it bakes quicker and more even than a loaf pan. Mine takes about 20 minutes.
