Crispy Rice Salad

Ingredienser

2 cups cooked rice

3 Tbsp oil

2 Tbsp thai red curry paste

1-1.5 cups of chopped herbs and greens (parsley, arugula, green onions, mint, cilantro)

1 red onion (sliced)

3 birds eye chillis (sliced) (optional)

1 garlic clove (minced)

1 in. ginger (minced)

2 tsp sugar

1-2 Tbsp fish sauce

Juice from 1 lime

Handful of crushed, roasted peanuts

Vejledning

1) Preheat oven to 400F. In a large mixing bowl, mix rice, curry paste and oil until well combined. Spread over a lined baking tray and bake for 35-40 minutes, stirring halfway.

2) Make your sauce by mixing together the garlic, ginger, sugar, fish sauce and lime juice. Taste and balance - it should taste sweet, sour and salty. Set aside.

3) Once the crispy rice is done, add to a large bowl then top with your chopped herbs and greens, red onion and chillis (if using). Pour sauce over and toss through. Top with roasted peanuts and enjoy!
