Super simple one dish, gnocchi, chicken, veggie bake. Try this high protein meal prep!

500g Gnocchi (fresh or vacuum-packed, unboiled)

400g Chicken breast

180g Chickpeas (canned, drained, no added salt)

300g Plum or cherry tomatoes

200g Broccoli

Garlic granules, smoked paprika, salt, pepper

50g Light cream cheese

Juice of 1 lemon

1 Garlic clove (crushed)

1 tsp Dijon mustard

Vejledning

Add the gnocchi, tomatoes, and broccoli to a baking tray. Toss with seasonings and bake in a preheated oven at 180°C for 35 minutes.

Place the chicken breast on a separate tray beneath and roast for 20–25 minutes until cooked through.

Mix together the light cream cheese, lemon juice, crushed garlic, Dijon mustard, salt, and pepper to make the sauce.

Combine everything in one dish, stir through the sauce, and enjoy.
